docs: state one consistent position on model support

The README claimed Claude models "score highest in our benchmarks" while
the Safety section said Shannon is "officially supported with Claude
models" and ai-providers.md said evaluations and harness are tuned for
Claude. Three different strengths, and the benchmark is not published.

Use the sourced framing everywhere, and stop describing Anthropic as the
only supported provider now that OpenAI, xAI, and Bedrock are built in.
