feat: gstack-dispatch-install — persistent daemon via launchd/systemd

macOS: creates ~/Library/LaunchAgents/ plist with KeepAlive.
Linux: creates ~/.config/systemd/user/ service with Restart=always.
Supports --uninstall to remove the service cleanly.
