fix: replace broken AP Statistics link with Seeing Theory

Browse Source 
Replace the broken Medium link (automata88.medium.com - returns 404)
with Seeing Theory (seeing-theory.brown.edu), an award-winning visual
introduction to probability and statistics from Brown University.
